The first batch of pizzelles are ready for tonight’s holiday gathering. It was a real effort to make some that were not well done — we like them very golden brown and crispy, but I know the very light, softer cookies are a favorite, too. Yep… they taste as good as they look!!
These have been a holiday staple in my house my entire life. The secret to a great tasting pizzelle is the flavoring — I use both vanilla extract and anise oil. Anise extract does not have enough flavor and I have never tried anise seeds. Anise oil is a little harder to find than the extract — your local pharmacy can order it for you. If not, try another pharmacy that uses a different distributor.
